20160111 Scones




    • 1 1/2 cups (350g) bread flour

    • 5/8 cups (150g) pastry flour

    • 2 tablespoons (30g) baking powder

    • 3 tablespoons (50g) shortening

    • 1/3 cup (80g) butter

    • 1 1/8 cups (265ml) milk

    • 2 eggs

    • 1/2 cup (125g) sugar

    • 2 teaspoons (10g) salt

    • Bread flour dusting table

    • *choice of dried fruit (apricots, cranberries), dry herbs (parsley) or cheese (mozerella or cheddar)


Egg wash

  • 1 egg

  • 1/8 cup water



  1. Preheat oven at 350°F.

  2. Line baking tray with parchment paper.

  3. Sift flour and baking powder into a bowl and add shortening. Mix until it looks mealy.

  4. Whisk eggs. Add milk and whisk again. Dissolve sugar and salt into milk/egg mixture.

  5. Add to dry ingredients and mix for a short time - ingredients are slightly incorporated.

  6. Dust table with bread flour. Turn dough onto table and work gently. Flatten into a disk then fold in fruit/cheese.

  7. Roll out dough and cut (1/2 inch thick) using a biscuit cutter.

  8. Place cut scones tray and brush with egg before baking. Bake for 15-20 minutes. Biscuit tops should be golden brown.

Breakfast Bagels to Go


    • Bagel

    • Vegetable of choice: cucumber slices, sliced tomato, mesclun mix or lettuce

    • Spread whipped cream cheese

    • Cheese of choice

    • 1 fried egg

    • 2 slices bacon of choice



  1. Heat oil or butter and fry egg. Drain on paper towel.

  2. Cut bagel in half and toast bagel. Place on a plate.

  3. On bottom half of bagel place cheese slices or grated cheese then put egg on top.

  4. Cover and microwave for 15-20 seconds—until cheese has melted.

  5. To the bagel now add vegetables and bacon. Spread cream cheese on the other half of the bagel and put on sandwich. Cut in half and serve.
