20160208 Coleslaw

 

Coleslaw

Ingredients:

    • 1/2 cup (100g) Cabbage

    • Optional: 1/4 cup red onion thinly sliced, red cabbage shredded

    • 1/2 Carrot grated

    • 2 tsp Vinegar white vinegar

    • 1 tsp White balsamic vinegar

    • Salt (1/4 tsp) & pepper to taste

    • 1/4 cup Mayonnaise

    • 1/2 tsp Dijon mustard

    • 2 tsp sugar

 

Directions:

  1. Finely shred cabbage and carrot. Rinse, drain and set aside.

  2. In a small bowl, add the remaining ingredients and mix.

  3. Toss with vegetables.

Festival

Ingredients:

    • 1/4 cup pastry flour

    • 1/3 cup cornmeal

    • 3/4 cup all-purpose flour

    • 1/2 teaspoon salt

    • 2 teaspoons baking powder

    • 1/4 tsp baking soda

    • 1/3 cup sugar

    • 1/2 cup water

    • Oil for frying

Directions:

  1. Mix dry ingredients together. Add water and mix only until dough comes together. Rest 15 minutes.

  2. Shape small pieces of dough and fry until golden.

  3. Drain on paper towel.
    *Festivals are a snack or side popular in Jamaica served with Eskovitch fish or jerk meats

  

20160208 Fried Plantain

 

Fried Plantain

Ingredients:

    • 1 plantain

    • Oil for frying

 

Directions:

    1. Heat oil in skillet.

    2. Slice plantains and add to hot oil.

    3. Fry on medium/medium high heat until brown. Be sure to cook on both sides.

    4. Remove from pan and place on plate with a sheet of paper towel to remove excess oil.

    5. Serve.

*Plantains are a common side dish in Jamaican cuisine.

  

20160208 Jerk Pork

 

Jerk Pork

Ingredients:

    • 8 oz pork (shoulder or butt)

    • Season salt

    • 1 teaspoon jerk dry rub

    • 1 teaspoon browning

    • 2 cloves garlic chopped roughly

    • 2 teaspoons freshly grated ginger

    • 1 tablespoon soy sauce

    • 1/2 teaspoon garlic powder

    • 1 1/2 to 2 tablespoons jerk sauce

    • 1/4 teaspoon liquid smoke

Directions:

  1. In a bowl, add pork and all the above ingredients and rub into meat. Cover and refrigerate 1-3 days.  Heat grill until hot.

  2. Remove onions and garlic from pork and grill pork on both sides until brown.

  3. Place on a baking tray or in oven ready dish and cover with foil. Cook in preheated oven 350 F. Cook until done.

  4. Allow meat to rest about 5 minutes then chop into small pieces and serve hot.
