20171125 Sweet Potato Pudding

Sweet Potato Pudding

Ingredients:

    • 3 Jamaican Sweet Potatoes
    • 1 cup Brown Sugar
    • 1/2 cup Flour
    • 1 can Coconut Milk
    • 1/4 cup Unsalted Butter melted
    • 1 whole Nutmeg, grated
    • 1 teaspoon Salt
    • 1 teaspoon Cinnamon Powder
    • 1 teaspoon Vanilla Extract
    • 1 tablespoon White Rum (optional)
    • 1 tablespoon Lime Juice
    • handful of Raisins or Cranberries

 

Directions:

  1. Peel and cut sweet potatoes.  Place in a blender and process.

  2. Add brown sugar, flour and raisins.

  3. Combine coconut milk to sweet potato mixture.

  4. Add melted butter, nutmeg, salt, cinnamon powder, vanilla, rum and lime juice.

  5. Scrape mixture into a greased 9 x 13 inch baking pan.

  6. Bake in a preheated oven 350 F for 50 minutes.
